Cake Mix Cookie Bars
Description
This recipe uses yellow cake mix as a base, combined with coconut oil, milk, egg, sprinkles, and white chocolate chips. Mixing these ingredients creates a thick batter with enhanced texture from the chips and visual appeal from the sprinkles. Baking in a greased pan until a clean toothpick emerges results in bars that hold together well but remain tender.
The bars offer a soft crumb and sweetness suitable for snacks, desserts, or casual gatherings. The choice of sprinkles allows customization for holidays or events, with larger sprinkles recommended to maintain texture through baking. Lining the pan with parchment paper helps in lifting out the bars easily and tidies cleanup.
Store the bars in an airtight container at room temperature for up to five days. For longer storage, freeze sliced bars in a freezer-safe container or bag for up to three months and thaw at room temperature before serving. Coconut oil may be substituted with canola or vegetable oil if desired.
Ingredients
- 1 yellow cake mix
- 1/3 cup Sprinkles
- 1/3 cup coconut oil melted
- 1/3 cup milk
- 1 egg large
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees. Grease an 8x8 inch baking pan and set aside.
- In a large bowl, combine cake mix and sprinkles. Stir in coconut oil, milk, and egg, mixing well to combine. Stir in white chocolate chips. Batter will be thick.
- Spread batter into prepared baking pan. Bake in the preheated oven for 30-35 minutes, or until toothpick inserted in center comes out clean.
- Cool on a wire rack before cutting. Enjoy!
Notes
- Line the baking pan with parchment paper to easily lift the bars out and simplify cleanup.
- Canola or vegetable oil can be used instead of coconut oil.
- Use larger sprinkles for best texture, as smaller ones may melt into the batter.
- Store leftover bars in an airtight container at room temperature for up to 5 days.
- Freeze fully cooled, sliced bars in freezer-safe containers or bags for up to 3 months; thaw before serving.
