Cake Mix Cookies
Description
Cake Mix Cookies use one box of cake mix combined with vegetable oil and eggs to create a simple cookie dough. The chemical leavening in the cake mix helps the cookies rise and retain a tender crumb. Optional mix-ins such as chocolate chips or sprinkles can be folded in to add variety and texture.
The dough is portioned into balls that bake into cookies with a soft interior and slightly firmer edges. Baking at 350°F for 10–12 minutes ensures the centers set without overbaking. Cooling on the baking sheet stabilizes the cookies before transferring them to a wire rack to cool completely.
This recipe allows for any cake mix flavor, offering versatility. Adjusting oil quantity when using sprinkle mixes helps keep cookies from spreading too thin, creating thicker, fluffier cookies. Using room temperature eggs improves mixing and texture. Cookie scoops yield even-sized cookies, and shaping warm cookies with a biscuit cutter produces clean edges.
Ingredients
- 1 (15.25-ounce/432g) box cake mix
- ½ cup vegetable oil
- 2 large egg
- ½ to 1 cup mix-ins optional (chocolate chips, sprinkles, M&Ms)
Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a large mixing bowl, combine the cake mix, oil, and eggs, and stir until well combined. Add mix-ins if using.
- Scoop the dough into 2-tablespoons-sized balls and place on the baking sheets 2 inches apart.
- Bake each sheet for 10 to 12 minutes or until the centers appear dry. Cool for a few minutes on the baking sheet, then transfer to a wire cooling rack and let cool completely.
Notes
- Any cake mix flavor can be used, from chocolate to lemon, with compatible mix-ins.
- Reduce oil to one-third cup when using sprinkle or confetti cake mixes to reduce spreading.
- Bring eggs to room temperature before mixing for an even dough without overmixing.
- Use a cookie scoop for uniform cookie sizes and bake evenly.
- Shaping warm cookies with a biscuit cutter yields neat, bakery-style edges.
