Calzone Recipe
Description
The Calzone Recipe combines Italian sausage, bell peppers, pepperoni, mozzarella, and pizza sauce encased in pizza dough. After cooking the sausage and softening the peppers, a layer of sauce and cheese is spread on the rolled-out dough. The filling is added before folding the dough over, sealing, and cutting slits to allow steam escape during baking. The calzones bake to a golden brown with a tender yet crisp crust, and the cheese melts inside, complementing the seasoned meat and peppers.
These calzones are served immediately topped with chopped parsley and accompanied by remaining pizza sauce for dipping. Their substantial size makes them a hearty meal, but they can be made smaller for snacks or appetizers. The adaptable portion size allows cooks to tailor servings depending on the occasion.
The recipe fine-tunes convenience by allowing the use of either homemade or store-bought pizza dough, including dough from a tube which requires less rolling. Adjusting the size from four larger calzones per pound of dough to six or eight mini versions offers serving versatility without changing the ingredients or basic method.
Ingredients
- 1 pound pizza dough homemade or store bought
- 8 ounces Italian sausage casings removed
- ¾ cup bell pepper cut into thin strips, you can use any color you like
- ½ cup pepperoni
- 1 cup pizza sauce divided use
- 2 cups mozzarella cheese shredded
- 1 egg beaten
- 1 tablespoon parsley chopped
- cooking spray
Instructions
- Preheat the oven to 425 degrees F. Coat a sheet pan with cooking spray.
- Divide the pizza dough into 4 pieces.
- Roll the dough into 1/4 inch thick ovals or rectangles.
- Place the sausage in a pan and cook over medium heat for 4-5 minutes or until browned, using a spatula to break up the meat as it cooks.
- Add the bell peppers to the pan and cook for 3-4 minutes or until softened.
- Spread 2 teaspoons of pizza sauce onto one side of each piece of dough. Top with 1/4 cup cheese.
- Divide the sausage and pepper mixture evenly on top of the sauce. Top with pepperoni and an additional 1/4 cup of cheese.
- Fold the dough over and pinch to seal the edges. Use a sharp knife to cut 2-3 slits into the top of each calzone.
- Brush each calzone with the beaten egg.
- Place the calzones on the sheet pan. Bake for 15-17 minutes or until golden brown.
- Top with parsley, then serve immediately with remaining pizza sauce for dipping.
Notes
- The recipe yields about four calzones per pound of pizza dough for main course servings.
- For appetizers or snacks, make six to eight smaller calzones instead.
- Both homemade and store-bought pizza dough work; dough from a tube saves rolling time.
