Candied Pecans
Description
To make candied pecans, pecan halves are first coated in a beaten egg white and water mixture that helps the sugar-spice mixture adhere evenly. The sugar mixture combines granulated sugar, cinnamon, and salt for balanced sweetness and warm spice notes. The pecans are spread on a parchment-lined baking sheet and baked at a moderate temperature, with frequent stirring to promote even caramelization and prevent burning. The result is a glossy, crunchy coating around the nuts with a warm cinnamon flavor and a subtle salty contrast.
This recipe is versatile, allowing the addition of spices such as ginger or apple pie spice. A pinch of cayenne can add unexpected heat, and vanilla extract can enrich the flavor in the egg wash. The candied pecans can be enjoyed as a standalone snack, sprinkled into greens or grain salads to add crunch and sweetness, or crushed over yogurt and smoothie bowls. Dark chocolate drizzle can further elevate the flavor for gifting or special treats.
They keep well stored in airtight containers and, when contained in jars tied with ribbons, make thoughtful homemade gifts.
Ingredients
- 1 cup granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 egg white
- 1 tablespoon water
- 1 pound pecans
Instructions
- Preheat oven to 325°F.
- In a small bowl combine the first 3 ingredients. Set aside.
- In a large bowl, whisk the water with the egg white until airy and light. Add the pecan halves and stir to coat.
- Sprinkle the sugar mixture over the pecans. Mix together evenly and spread evenly onto a parchment-lined baking sheet.
- Bake for about 40 minutes, until pecans are browned and the sugar has caramelized. Be sure to stir the pecans regularly as they cook.
Notes
- Enhance the spice profile by adding pumpkin pie, ginger, or apple pie spice to the sugar mixture.
- Add a teaspoon of vanilla extract or a pinch of cayenne pepper to the egg white mixture for depth or heat.
- Other nuts like cashews, almonds, or walnuts can be used in place of pecans with this method.
- Use candied pecans to add texture and sweetness to kale or spinach salads and breakfast bowls.
- Drizzle with dark chocolate to create an elevated sweet treat for gifting.
