Description
This dessert begins by crushing mini candy canes, with a portion reserved for garnish. The crushed candy canes are combined with raspberry Jell-O powder, then hot boiling water is stirred in until both the Jell-O and candy cane bits dissolve and melt, infusing the gelatin with mint flavor and a hint of texture.
After cooling slightly, most of the whipped topping is folded into the mixture to yield a creamy, fluffy consistency. The mixture is poured into small serving glasses and chilled until fully set. Once firm, the dessert is topped with remaining whipped topping and a sprinkle of reserved candy cane pieces for decoration and additional peppermint notes.

Ingredients
- 12 candy canes mini
- 1-1/2 cups water boiling
- 1 package raspberry jello
- 1 whipped topping tub
Instructions
- Crush the candy canes and reserve about 2 T for using as a garnish.
- Combine the remaining candy canes, about 1/3 of a cup, in a bowl with the jello.
- Add the boiling water and stir for about 2 minutes, until the Jell-o dissolves and the candy cane pieces melt.
- Reserve 1/2 c. of the Cool Whip. Stir the rest of the Cool Whip into the Jell-o mixture until it is well mixed.
- Pour into 2 oz. shot glasses and refrigerate for a few hours until set.
- Top with reserved Cool Whip and candy cane pieces.
