Ingredients

  • 1 tablespoon olive oil
  • 1 onion finely diced, small
  • 2 cloves garlic minced
  • 3/4 teaspoon cumin ground
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon oregano dried
  • 1/3 cup vegetable broth
  • 15.5 ounces pinto beans drained and rinsed, canned
  • 1 hot sauce dash
  • salt to taste
  • black pepper to taste
  • cilantro fresh chopped, for garnish

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add diced onion and sauté until softened, about 3-5 minutes.
  2. Add minced garlic, cumin, chili powder, paprika, and oregano. Cook until the garlic is golden and aromatic.
  3. Add the pinto beans and broth to the saucepan. Stir to combine with the onion and spices. Season with salt and black pepper, then add a dash of hot sauce.
  4. Lower heat. Cover and simmer for about 10 minutes, stirring occasionally.
  5. Remove from heat. Garnish with chopped cilantro before serving.
