Ingredients
- 4 chicken breast , halveed, boneless, skinless
- 2 tablespoons vegetable oil
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 2 plum tomatoes , sliced
- 6 fresh basil leaves , thinly sliced
- 4 lices mozzarella cheese
- 1/2 cup balsamic glaze
Instructions
- Preheat oven to 400 degrees.
- Place chicken in an ungreased 9x13 baking pan.
- Brush chicken with oil and sprinkle with salt and pepper.
- Top with tomatoes and basil.
- Bake, uncovered, for 15-20 minutes until chicken is cooked through.
- Add cheese on top and bake for an additional 5 minutes or until melted.
- Drizzle with balsamic glaze just before serving.
