Description
This recipe involves browning chicken breasts seasoned with garlic granules, oregano, salt, and pepper in an oven-proof skillet. Cherry tomatoes and diced red onions are added, then balsamic vinegar is poured over the mixture before transferring the pan to the oven to roast. After about 30 minutes, shredded mozzarella is added on top of each piece, and the dish returns to the oven until the cheese is melted and lightly bubbly.

Ingredients
- 1 tablespoon olive oil
- 600 g chicken breast
- 100 g mozzarella cheese grated
- 200 g cherry tomato halved
- 1 red onion finely diced
- 2 tablespoon basil chopped, fresh
- 1 tablespoon garlic granules
- 1 tablespoon oregano dried
- 1 pinch sea salt
- 1 pinch black pepper
- 2 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- On the hob (stovetop), heat 1 tablespoon Olive oil in a large, oven-proof pan and add the 600 g Chicken breast. Season with 1 tablespoon Garlic granules, 1 tablespoon Dried oregano and 1 pinch Sea salt and ground black pepper. Keep turning the chicken until it has browned on all sides.
- Add 200 g Cherry tomatoes and 1 Red onion to the pan.
- Add 2 tablespoon Balsamic vinegar to the pan. Put the pan into the oven for 30 minutes.
- Remove from the oven and cover each chicken breast with equal amounts 100 g Mozzarella.
- Return to the oven for 5-10 minutes, or until the cheese has melted. Sprinkle with 2 tablespoon Fresh basil and serve.
Notes
- Slicing chicken breasts horizontally to stuff with tomato and mozzarella is an option for an alternative presentation.
- Adding a layer of pesto under the tomato and cheese can enhance the flavor profile.
- Using thinner chicken breasts or pounding them slightly results in quicker, even cooking.
