This recipe involves browning chicken breasts seasoned with garlic granules, oregano, salt, and pepper in an oven-proof skillet.   • 1 tablespoon olive oil
  • 600 g chicken breast
  • 100 g mozzarella cheese grated
  • 200 g cherry tomato halved
  • 1 red onion finely diced
  • 2 tablespoon basil chopped, fresh
  • 1 tablespoon garlic granules
  • 1 tablespoon oregano dried
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 2 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. On the hob (stovetop), heat 1 tablespoon Olive oil in a large, oven-proof pan and add the 600 g Chicken breast. Season with 1 tablespoon Garlic granules, 1 tablespoon Dried oregano and 1 pinch Sea salt and ground black pepper. Keep turning the chicken until it has browned on all sides.
  3. Add 200 g Cherry tomatoes and 1 Red onion to the pan.
  4. Add 2 tablespoon Balsamic vinegar to the pan. Put the pan into the oven for 30 minutes.
  5. Remove from the oven and cover each chicken breast with equal amounts 100 g Mozzarella.
  6. Return to the oven for 5-10 minutes, or until the cheese has melted. Sprinkle with 2 tablespoon Fresh basil and serve.

Notes

  • Slicing chicken breasts horizontally to stuff with tomato and mozzarella is an option for an alternative presentation.
  • Adding a layer of pesto under the tomato and cheese can enhance the flavor profile.
  • Using thinner chicken breasts or pounding them slightly results in quicker, even cooking.
