Description

This Caprese Chicken starts with pan-searing chicken breasts seasoned simply with Italian seasoning, salt, and pepper. After browning and cooking through, the skillet is used to make a sauce by reducing balsamic vinegar sweetened with brown sugar. Garlic and halved grape tomatoes are added and simmered until soft, releasing their juices to form a bright, slightly sweet-tart sauce.

Fresh basil is folded in to add herbal brightness before the chicken returns to the pan. The fresh mozzarella slices melt on top, providing a creamy contrast to the savory chicken and rich balsamic tomato sauce.   • 1 tablespoon extra-virgin olive oil
  • 4 chicken breast about 1 pound total, boneless skinless halves
  • 1 teaspoon Italian seasoning
  • salt
  • black pepper
  • 1/2 cup balsamic vinegar
  • 1 ½ tablespoons brown sugar
  • 4 cloves garlic minced
  • 1 cup grape tomatoes halved
  • 3 tablespoons basil divided, torn fresh
  • 4 lices fresh mozzarella

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add olive oil.
  3. Season chicken with Italian seasoning, salt, and pepper.
  4. Add chicken to pan, and cook until golden and cooked through, about 6-8 minutes per side.
  5. Transfer cooked chicken to a plate.
  6. Reduce heat to medium-low.
  7. Add balsamic vinegar and brown sugar to skillet, and stir to combine.
  8. Stir in garlic, and cook for 1 minute.
  9. Add tomatoes. and season with salt.
  10. Let tomatoes simmer until soft, 6-7 minutes.
  11. Stir in half basil.
  12. Return chicken to skillet.
  13. Top with mozzarella, and cover to melt cheese.
  14. Spoon tomatoes over chicken and sprinkle with remaining basil before serving.
