  • 1/4 cup red onion chopped
  • 1 cup grape tomatoes quartered
  • 1 cup arugula baby
  • 1/4 cup basil finely chopped, fresh
  • 3 teaspoons garlic minced
  • 2 teaspoons olive oil
  • 3 teaspoons balsamic vinegar
  • 1 teaspoon salt
  • black pepper to taste, fresh
  • 1 avocado chopped
  • 1 cup fresh mozzarella chopped

Instructions

  1. Combine all of the ingredients except for the avocado and mozzarella in a large bowl and mix carefully. Cover and refrigerate until ready to serve. When ready to serve, mix in the avocado and mozzarella. Enjoy!
