Ingredients
- 1 (19 oz) chickpeas drained and rinsed, canned
- 1/4 cup red onion chopped
- 1 cup grape tomatoes quartered
- 1 cup arugula baby
- 1/4 cup basil finely chopped, fresh
- 3 teaspoons garlic minced
- 2 teaspoons olive oil
- 3 teaspoons balsamic vinegar
- 1 teaspoon salt

- 1 avocado chopped
- 1 cup fresh mozzarella chopped
Instructions
- Combine all of the ingredients except for the avocado and mozzarella in a large bowl and mix carefully. Cover and refrigerate until ready to serve. When ready to serve, mix in the avocado and mozzarella. Enjoy!
