Bread:

  • 1 cup brown sugar
  • 2/3 cup vegetable oil See note #1
  • 3 large egg
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 teaspoons apple pie spice
  • 1 large apple peeled and cored apple cut in 1/2-inch chunks, Granny Smith
  • 1 cup pecans chopped

Glaze:

  • 4 tablespoons butter
  • ½ cup brown sugar packed
  • 2 tablespoons heavy cream
  • ½ cup powdered sugar sifted

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9 x 5 -inch loaf pan and line the bottom with a piece of parchment paper.
  3. In the bowl of your stand mixer add brown sugar, vegetable oil, and eggs.Mix with paddle attachment until smooth.
  4. In a separate large bowl combine the flour, baking powder, baking soda, salt, and apple pie spice. Stir together until well mixed.
  5. Add the dry ingredients to the wet ingredients mixing gently until they are fully combined.
  6. Fold in the chopped apple and pecans.
  7. Pour the batter into the pan and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
  8. When done baking remove from the oven and let cool in the pan for 30 minutes. Then remove from the pan and cool on a wire rack.
  9. Once the apple bread is cool make the frosting by adding the butter and packed brown sugar to a sauce pan and heating over medium heat. When it begins to bubble let cook for 2 minutes, stirring vigorously.
  10. Add the heavy cream and continue to stir cooking for 30 seconds more.
  11. Remove the pot from the heat and add the powdered sugar, stirring everything together until it forms a thick frosting.
  12. Pour over the top of the apple bread and use a knife to spread it evenly. It cools quickly so be fast!

Notes

  • You can replace up to ⅓ cup of the vegetable oil with applesauce for a slightly lighter texture.
  • Ensure apples are peeled and cut into half-inch chunks for even distribution and cooking.
  • Cool the bread in the loaf pan for 30 minutes before removing to maintain structure.
  • The caramel glaze adds moisture and sweetness; prepare it while the bread cools to apply promptly.
