  • 1/2 cup applesauce unsweetened
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 2 teaspoons apple pie spice

Topping

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • 1 cup apple cider
  • 1/2 cup water
  • pecans optional, toasted

Instructions

  1. Preheat oven to 350 F.
  2. In a large bowl, whisk together applesauce, milk, oil, and vanilla together until well-combined.
  3. Stir dry ingredients into wet ingredients until combined.  
  4. Pour batter into an 8x11-inch, or similarly sized, baking dish. 
  5. In a separate bowl, stir sugars and cinnamon together.  
  6. Sprinkle topping evenly over the batter.
  7. Pour apple cider and water over the topping. DO NOT STIR! 
  8. Bake for 40 minutes, or until middle is set.
  9. Cool 5-10 minutes before serving. 
  10. Top with toasted pecans, if desired.

Notes

  • Any milk from skim to whole or nondairy milk can be used without affecting the cake's texture.
  • Adjust the apple pie spice or substitute ground cinnamon alone to achieve preferred spice intensity.
  • The water in the topping can be partially or fully replaced with additional apple cider for a fruitier topping syrup.
  • Toasted pecans add crunch and nutty flavor if desired.
