Caramel Apple Coffee Cake
Description
Caramel Apple Coffee Cake combines a yellow cake mix and vanilla instant pudding to form a soft and moist batter. Apple juice is incorporated gradually, contributing moisture without overwhelming the texture. The batter is poured into a baking dish and topped with caramel bits, fresh peeled apple slices, and a cinnamon-brown sugar mix, which caramelizes in the oven. Baking at 350°F for about 50 minutes results in a cake with a gentle sweetness and subtle tartness from the apples.
The cooked apples on top create a tender, slightly spiced layer complementing the creamy caramel. The texture ranges from soft cake underneath to tender fruit and slight caramel chewiness on top. This cake serves well as a brunch treat or afternoon snack with tea or coffee.
It should be baked until a toothpick inserted comes out clean, ensuring it is cooked through without being dry. Using peeled apples prevents toughness, and the layering of caramel bits ensures melted caramel pockets within the topping.
