  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 egg
  • 2 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 cup milk
  • 2 apple

Frosting

  • 8 oz cream cheese room temperature
  • 1/2 cup butter room temperature
  • 4 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Caramel Sauce

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 1/2 teaspoon baking soda
  • 1/2 cup half and half

Instructions

Cupcakes

  1. Preheat the oven to 350 F.
  2. Peel, chop and core the apples.
  3. Cream the butter, white sugar and brown sugar in a mixing bowl until well combined.
  4. Add in the eggs and vanilla and mix well.
  5. Combine the flour, baking powder, cinnamon, nutmeg and salt in a small bowl.
  6. Add the flour mixture and the milk to the sugar mix and mix until just combined.
  7. Fold in the chopped apples.
  8. Spoon the batter into cupcake tin and bake for 18-20 minutes.

Frosting

  1. While the cupcakes are baking and cooling get out the cream cheese and butter and let them come to room temperature. The frosting will be smoother if they are not chilled.
  2. When the cupcakes are cool combine the cream cheese and butter and mix at high speed until smooth.
  3. Add in the powdered sugar, nutmeg and cinnamon and mix until the frosting is spreadable. If it is too thick add a few tablespoons of milk or cream.
  4. Pipe onto the cupcakes for a swirly look.

Caramel Sauce

  1. Melt the butter in a saucepan over low heat.
  2. Add the remaining ingredients and bring the sauce to a rolling boil. Cook for 5-7 minutes.
  3. Remove from heat and let cool to room temperature.
  4. Drizzle over the cake.
