Description
This dip starts by dissolving sugar, salt, water, and light corn syrup in a saucepan over medium-low heat until syrupy. The mixture is then boiled until it reaches the deep caramel color and 340°F, signaling the right stage for caramel. Quickly, room-temperature heavy cream is carefully stirred in to create a creamy sauce, followed by butter added one piece at a time until smooth. Vanilla extract rounds out the flavor.
The sauce thickens as it cools and is best served with crisp apple slices or graham crackers. The texture is creamy and smooth with a classic caramel taste that balances the fruit's tartness.
This caramel dip is versatile and can be stored refrigerated in an airtight container for up to 10 days. The recipe advises careful temperature monitoring and cautious handling during hot caramel preparation to avoid burns. Adjusting salt quantity can make a traditional or salted caramel depending on preference.
Ingredients
- 1 cup granulated sugar
- ¼ salt heaping teaspoon
- ¼ cup water
- 2 Tablespoons light corn syrup
- ½ cup heavy cream room temperature
- 2 Tablespoons unsalted butter cut into 2 pieces, room temperature
- 1 ½ teaspoons vanilla extract

Instructions
- Combine sugar, salt, water, and corn syrup in a small saucepan over medium-low heat. Stir occasionally until sugar is dissolved. If any sugar remains on the side of the pot, use a damp pastry brush to wash them down into the pot.
- Increase heat to medium and cook, stirring occasionally, until mixture comes to a boil.
- Once bubbling, allow mixture to cook until it begins to turn caramel in color and reaches 340F (171C).
- Immediately remove the pot from heat and, slowly, cautiously (because it will bubble a lot – don’t get splattered!), drizzle cream into the mixture while stirring.
- Once cream is fully incorporated, stir in butter one piece at a time until the mixture is smooth.
- Stir in vanilla extract.
- Allow caramel to cool before serving (it will thicken as it cools). We like to dip apple slices and graham crackers but you can really dip anything you’d like!
Notes
- Handle melted sugar with care as it reaches very high temperatures; avoid contact until cooled.
- Use a damp pastry brush to wash down sugar crystals on pot sides to prevent crystallization.
- Ensure the candy thermometer is immersed in the mixture without touching the pan bottom for accurate temperature.
- Adjust salt to ¼ teaspoon for classic caramel or ½ teaspoon for salted caramel flavor.
- Store the dip in an airtight container in the refrigerator for up to 10 days.
