Caramel Corn Recipe
Description
The recipe starts with plain popped corn spread on a baking sheet while a caramel sauce is prepared by boiling brown sugar, corn syrup, butter, and salt. After cooking the caramel to a set point, baking soda and vanilla are added to create a light, foamy texture that coats the popcorn. Baking the coated corn slowly at a low temperature sets the caramel and ensures an even crispness.
The finished caramel corn has a crunchy texture with pockets of rich, buttery caramel and a slightly smoky sweetness due to the browning of sugars. A touch of salt complements the sweetness and rounds out the flavor profile, making it satisfying and addictive.
It can be served as a snack or dessert, suitable for sharing or as individual treats. The recipe allows for adjustments such as using salted or unsalted butter to influence the salty-sweet balance.
Ingredients
- 10 cups Popcorn popped plain
- 1 ½ cups brown sugar packed
- 3/4 cup light corn syrup
- 3/4 cup butter
- 1/2 teaspoon kosher salt
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions
- Grease a large rimmed baking sheet or pan with cooking spray or line with a silicone baking mat.
- Preheat oven to 225F.
- Put popcorn on baking sheet, and place in the oven while you make the caramel.
- Add brown sugar, corn syrup, butter, and salt to a large, heavy saucepan.
- Bring the mixture to a boil, stirring constantly.
- Let it boil 5 minutes without stirring.
- Remove from heat.
- Add baking soda and vanilla, and stir in to combine.
- Remove popcorn from oven, and pour caramel over warm popcorn, tossing to coat. The popcorn may not be completely coated, and that's ok.
- Bake for 60 minutes, stirring every 15 minutes.
- Remove from oven and let cool in a single layer on the baking sheet.
- Break apart before serving.
Notes
- Use salted butter for a salted caramel variety or unsalted butter for a traditional sweet caramel flavor.
- Coat the popcorn evenly but expect some pieces to remain lighter; this adds texture variation.
- Bake at a low temperature with intermittent stirring to ensure even caramel coating and crispness.
