Caramel Fudge (Russian Fudge)
Description
Caramel Fudge involves dissolving granulated sugar in milk over low heat, then adding sweetened condensed milk, butter, salt, and golden syrup. The mixture is boiled while stirring constantly to prevent burning until reaching the soft ball stage at about 240°F. After removing from heat and allowing to cool slightly, the mixture is beaten until thick and poured into a buttered pan to set.
Once cooled, the fudge is marked into squares and cut. The resulting confection has a smooth, creamy texture with a balanced sweetness and buttery caramel notes. It is a classic sweet suitable as a dessert, snack, or a handmade gift.
Ingredients
- 3 cups sugar granulated white
- 1/2 cup milk
- 1/2 cup sweetened condensed milk
- 4 1/2 ounces butter
- 1/8 teaspoon salt
- 1 tablespoon golden syrup
Instructions
- Generously butter an 8x8 baking tin.
- Put sugar and milk into a saucepan, heat gently over a low heat, stirring constantly until sugar dissolves.
- Add condensed milk, butter, salt and golden syrup. Stir until butter has melted.
- Bring to a boil and continue boiling until the soft ball stage (240 degrees F), stirring constantly to prevent burning.
- Remove from heat. Cool slightly. Using a hand held electric mixer, beat until thick.
- Pour into the buttered tin.
- Mark into squares. Cut into pieces when cold.
- Devour.
