Ooey gooey caramel and chocolate chips on a chewy oatmeal crust make these Caramel Oatmeal Bars amazing!

Ingredients
- 1 cup all-purpose flour
- 1 cup old fashioned oats
- ¾ cup butter melted
- 1 cup brown sugar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 32 caramels
- ⅓ cup half-and-half
- ½ cup chocolate chips semi-sweet
Instructions
- Grease a 9x13 inch pan with non-stick spray and set aside. Preheat oven to 325 degrees Fahrenheit.
- In a stand mixer or large mixing bowl with handheld mixer blend the first 6 ingredients together.
- Pat oatmeal mixture into prepared pan in an even layer
- In a saucepan melt caramels in ⅓ cup half & half together on medium heat, stirring frequently. Pour caramel over crumb mixture and sprinkle with chocolate chips.
- Bake for 20-25 min at 325 degrees Fahrenheit or until crust is just turning golden brown on sides.
Notes
- Place leftover bars in an airtight container or Ziploc bag. Store at room temperature for about 4 days or in the fridge for up a week.
- Alternatively, you can store leftover bars in the freezer! Wrap the 9×13 pan in plastic wrap or place leftovers into an airtight container. Store in the freezer for up to 3 months. Allow to thaw before eating!
