Ingredients

Servings
  • 12 ounces semi-sweet chocolate or chocolate chips, melting disks
  • 14 ounces caramel candies unwrapped, chewy
  • 1/4 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter unsalted
  • 1 cup peanuts salted

Instructions

  1. Line 1-2 baking sheets with parchment paper and set aside.
  2. Add the butter, cream and caramels to a Dutch oven over low-medium heat. Stir occasionally, careful not to let the mixture boil, until the caramels are fully melted and combined.
  3. Microwave Option: Add the caramels, heavy cream, vanilla extract, and butter to a microwave-safe bowl and microwave for 30 seconds, then stir and microwave for 15 seconds until smooth.
  4. If needed microwave an additional 30 seconds.
  5. Mix in the peanuts until well coated.
  6. Let mixture cool for 20 minutes, stirring every 5 minutes to prevent hardening.
  7. Scoop 1 tablespoon-sized scoop of the peanut caramel mixture onto the baking sheets.
  8. Refrigerate for 30 minutes to harden.
  9. Add the chocolate melting disks to a microwave-safe bowl and microwave for 30 seconds, then stir and microwave for 15 seconds increments until smooth.
  10. If needed microwave an additional 30 seconds.
  11. Dip the caramel peanut mounds into the chocolate, tap off excess chocolate, and place back onto baking sheets to harden.
  12. Let fully harden for 30 minutes in the refrigerator before eating or storing in covered containers for holiday gifts.
