Description
The recipe starts by popping two bags of plain popcorn and removing unpopped kernels. The caramel sauce is prepared by melting butter with brown sugar, corn syrup, and salt in a microwave-safe bowl, then adding baking soda, which causes foaming that lightens the caramel texture. This hot caramel is poured over the popcorn and stirred carefully to coat all pieces.
The coated popcorn is then microwaved in short bursts, stirring between to help set the caramel, producing a crunchy, sweet coating. An optional stovetop method involves boiling the caramel mixture before combining it with popcorn.
Store the caramel popcorn in airtight containers at room temperature for up to five days; to refresh softened popcorn, reheat briefly in a low oven. Using an air popper can produce 18–20 cups of popped corn from 9–10 tablespoons of kernels for this recipe.
Ingredients
- 2 (3.29-ounce) bags Popcorn plain
- ¾ cup butter
- ⅓ cup corn syrup white Karo syrup
- 1½ cup brown sugar
- ¾ teaspoon salt
- ¾ teaspoon baking soda
Instructions
- Make popcorn and place it in a large bowl. Remove the unpopped kernels.
- Using a medium-sized microwave-safe bowl add the butter, brown sugar, syrup, and salt. Heat in the microwave for 2 minutes.
- Add the baking soda to the melted ingredients. The mixture will foam up. Stir well.
- Pour over popcorn and toss together evenly coating all of the pieces.
- Place the coated popcorn in the microwave for 1 minute and then stir. Place it back into the microwave and heat for another minute. If you want crunchier popcorn, heat it for another minute.
- Allow the popcorn to cool and enjoy!
- Note: If you used salted popcorn, then reduce or omit the added salt.
Notes
- Stovetop option: boil butter, sugar, syrup, and salt mixture for 5 minutes before adding baking soda for different texture.
- Be careful not to scrape caramel crystals from pot sides to prevent crystallization.
- Air-popped popcorn can yield 18–20 cups, ideal for this recipe’s quantities.
- Store in airtight containers at room temperature for up to 5 days; to restore crispness, warm in a 250°F oven for 5-7 minutes.
