Caramel Snickers Cheesecake Bars
Description
Caramel Snickers Cheesecake Bars start with an Oreo cookie crumb crust, which adds both signature chocolate flavor and a crisp base to contrast the creamy cheesecake layer. The cheesecake filling blends cream cheese, sugar, eggs, sour cream, vanilla, and a pinch of salt to achieve a smooth, rich texture. Chopped Snickers bars are folded into the batter before baking, integrating chewy bits of nougat, caramel, and peanuts throughout the cheesecake matrix.
The cheesecake is baked until set but may remain slightly soft in the center, yielding a dense yet creamy consistency. Mini chocolate chips sprinkled on top add bursts of chocolate, while the option to drizzle caramel sauce enhances the sweet, layered flavors. The bars are cooled and chilled, allowing them to firm up before slicing.
These bars work well as a dessert for gatherings, offering a portion-controlled indulgence with familiar candy bar elements embedded in cheesecake. They pair nicely with coffee or milk and are suitable for serving at parties or as a special treat.
For variation, adding peanut butter to the cheesecake batter creates a new flavor dimension. Using Oreos with the cream included simplifies preparation. Warming caramel sauce before drizzling improves its flow and appearance.
Ingredients
Crust:
- 3 cups oreo cookie crumbs about 30 Oreos, crushed
- 6 tablespoons butter melted, salted
Cheesecake:
- 3 packages packages (8-ounces each) cream cheese softened to room temperature
- ½ cup granulated sugar

- For the crust, stir together the Oreo cookie crumbs and butter. Press the mixture into the bottom of the prepared pan.
- For the cheesecake layer, in a large bowl using a handheld electric mixer or in the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar until smooth and combined, 1-2 minutes.
- Add the eggs and mix until just combined; scraping down the sides of the bowl as needed.
- Add the sour cream, vanilla extract and pinch of salt. Mix until just combined.
- With a rubber spatula or large spoon, fold in the chopped Snickers bars.
- Spread the batter evenly on top of the crust. Sprinkle with chocolate chips.
- Bake for 30 minutes until the cheesecake is set throughout, adding a few minutes if the center is still soft and jiggly.
- Remove from the oven and let the bars cool completely. Refrigerate until completely chilled.
- Cut into squares, drizzle with caramel sauce (optional), and serve.
Notes
- Adding 1/2 cup peanut butter to the cheesecake batter creates a flavorful variation.
- Use Oreos with the cream filling intact for easier preparation when making the crust.
- Lightly warm caramel sauce before drizzling to achieve a smooth, attractive finish.
