Caramelised Ragu With Hidden Veg

Ingredients

  • 15 g dried porcini mushroom
  • 3 carrot cut into thirds
  • 4 celery cut into thirds, stalks
  • 1 leek washed and cut into thirds, white part trimmed
  • 2 zucchini cut into thirds
  • 2 whole peeled tomatoes 400g cans
  • 2 tbsp. olive oil
  • 500 g ground beef beef mince
  • 500 g ground pork or pork mince
  • 150 g Bacon chopped, shortcut
  • 2 tbsp. rosemary leaves or 2 small teaspoon dried, fresh, finely chopped
  • 1 tbsp. thyme or 1 teaspoon dried, fresh leaves
  • 4 garlic crushed/minced, cloves
  • 3 cups milk whole
  • 2 cups beef stock
  • 1 tbsp. red wine vinegar
  • salt to taste
  • black pepper to taste

Instructions

  1. Place mushrooms, in a small heatproof bowl and add enough boiling water to just cover. Set aside for 10 mins to rehydrate.
  2. In a food processor in batches, finely mince (but don't puree) carrots, then celery and leek, then zucchini and mushroom (and liquid). Set these all aside in one bowl.
  3. Process the tomatoes until smooth and set aside.
  4. Heat the oil in a large, heavy based pot and fry mince for 10-15 mins, or until all the liquid has evaporated and you are left with a layer of "brownings" (not burnings though!) in the bottom of the pot.
  5. Add rosemary, thyme and garlic. Cook for 1-2 mins until garlic is fragrant but not browned.
  6. Add the chopped bacon & vegetable mixture and cook, stirring occasionally for 15-20 mins or until vegetables have softened, the liquid has evaporated and a new layer is formed on the bottom.
  7. As they cook they vegetables will release moisture which will deglaze the bottom of the pot, releasing all the flavour from the brownings into your sauce. Make sure to scrape the bottom of the pot as this happens, this allows a new layer of brownings to develop.
  8. Reduce heat to low, add 1 ½ cups of milk to again deglaze the pan (scraping as you go) and cook for 10-15 mins or until milk has evaporated and you have another layer at the bottom.
  9. Repeat with the remaining milk.
  10. Add tomatoes, beef stock and vinegar to again deglaze the bottom of the pot and simmer for 30 mins, or until sauce thickens and deepens in colour.
  11. Serve with pasta and parmesan.

Notes

  • It is really important to let a good layer form at the bottom of your pot at each step, this creates the deep rich flavour. Be careful not to burn it though - especially if the surface of your pot is a dark colour.
  • The amount of time it takes for the moisture to evaporate at each step will also vary with the size of your pot.
  • To make this amount you will need a very large pot!
  • I have put the amount of portions as 8-10 as the serving size will vary by the person. Keep in mind this recipe is really filling - it can be a bit deceptive. What might seem like a small portion is not really that - the milk makes it very rich. The portion size I usually aim for is about 1 cup of ragu for my husband, and ¾ cup for me.
  • This sauces freezes REALLY well. I put portions of 2 into plastic ziplock bags, lay flat, label and freeze. (Even if you want to feed more that 2, I still would recommend freezing in portions of 2, because it makes it so much quicker when it comes to defrosting.)
  • Minor update 05 April 2018 - I have changed the order in which the bacon is added - now at step 6 rather than with the mince in step 4.
