Caramelized Onion Mashed Potatoes start by gently cooking sliced onions with butter, oil, salt, and thyme over medium-low heat for 20-25 minutes until deeply softened and golden brown, developing rich sweetness. Meanwhile, peeled and chunked potatoes are boiled in salted water until easily pierced with a fork, ensuring a tender, fluffy mash.
After draining and steaming briefly to remove excess moisture, the potatoes are mashed using a ricer or masher. Butter, heavy cream, Dijon mustard, and black pepper are stirred in to create a smooth and creamy base. Finally, the caramelized onions are folded through, imparting a subtle savory sweetness and herb aroma from the thyme.
This side dish pairs well with roasted meats and poultry. Its creamy texture and balanced flavors elevate traditional mashed potatoes with a gourmet touch.
Ingredients
For the onions
- 2 tablespoon butter
- 1 tablespoon neutral cooking oil generic cooking oil
- 3 onion
- ¼ teaspoon salt
- 1 tablespoon thyme leaves
For the potatoes
- 3 lb potato peeled and cut into 2.5cm/1" chunks
- 1 tablespoon salt
- 4 tablespoon butter
- ½ cup heavy cream
- 1 tablespoon Dijon mustard
- ¼ teaspoon black pepper
Instructions
Start with the onions
- Melt the butter and oil together in a large skillet or frying pan.2 tbsp butter1 tbsp oil

While the onions are cooking, start the potatoes.
- Bring a pan of water to a boil, then add the salt and potatoes.1 tbsp salt3 lb / 1.3 kg potatoes
- Cook for around 12-15 minutes until the potatoes are very soft. You should be able to push a fork through them easily.
- Drain the potatoes and let them steam in the sieve or colander for 2 minutes before returning them to the pan.
- Use a potato masher or a potato ricer to mash the potatoes.
