Description

The Caribbean Keshi Yena combines ground beef with diced onion, green bell pepper, and fiery scotch bonnet or habanero pepper sautéed in cooking oil with garlic and parsley. After browning the meat and vegetables, a blend of tomato paste, ketchup, mustard, Worcestershire sauce, capers, black pepper, salt, diced olives, and raisins is added for complexity and sweetness. Beaten eggs are stirred into the mixture to bind it, then it is transferred to a baking dish lined with thin slices of Edam or Gouda cheese. Additional cheese slices cover the top, optionally brushed with egg wash for a golden finish. Baking until bubbling and browned yields a casserole combining savory meat, sweet and tangy notes, and a rich, melted cheesy topping.

  • ¾ pound ground beef

Dairy

  • 14 Ounces edam cheese Sliced, or gouda cheese
  • 3 egg beaten

Vegetables

  • 1 yellow onion diced or sliced, or white onion
  • 1 green bell pepper diced
  • 1 tomato diced
  • 1 scotch bonnet pepper finely diced, or habanero pepper
  • 3 cloves garlic finely chopped or minced
  • 1 Tablespoon parsley rough chopped

Other Ingredients

  • 2 Tablespoons neutral cooking oil generic cooking oil
  • ¼ cup olive diced
  • 1 Tablespoon raisins
  • 1 Tablespoon ketchup
  • 1 Tablespoon tomato paste
  • 1 Tablespoon mustard spicy
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon capers
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Heat the oil in a large sauté pan or skillet on medium heat. Sauté the peppers and onions for about 5 minutes, until onions just start to be translucent. Then add the garlic for about a minute.
  2. Add the meat and parsley together into the pan and cook until the meat is just about cooked through. Drain the grease and return to the stove.
  3. Add all the other ingredients except the eggs. Cook for 5 minutes. Turn off the heat and rest for 2 minutes then stir in the egg.
  4. Slice the Gouda or Edam cheese into thin slices. Line the bottom and sides of your casserole dish or the bottom or your ramekins with slices of the cheese.
  5. Add the meat mixture on top of the sliced cheese.
  6. Top with the additional slices of cheese. If desired, brush the top of the cheese with an egg wash.
  7. Bake the dish, uncovered, for 35-45 minutes, or until the cheese is melty and lightly browned. If using ramekins, cook time may be shorter so keep an eye on it.
  8. Serve warm.
