Description
The Carmelitas recipe combines a base crust made of all-purpose flour, oats, brown sugar, baking soda, salt, and melted butter. Half the oat mixture is baked to form a firm crust. A topping of melted caramel sauce, created by gently heating caramel bits with heavy cream, is spread evenly over the crust. Semi-sweet chocolate chips and chopped walnuts add layers of flavor and texture over the caramel before the rest of the oat mixture tops the bars.
Baked in a 9x9 inch pan at 350°F, these bars develop a light brown color indicating the caramel is set and the oat crust is cooked through. Once cooled completely, they are cut into squares or rectangles. The texture combines the chew of oats, the softness of caramel, and the crunch of nuts, complemented by chocolate.
Ingredients
- 1 ounce package caramel or caramel bits
- 1/2 cup heavy cream or half and half
- 1 cup all-purpose flour
- 1 cup old fashioned oats
- 3/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 12 tablespoons butter melted
- 6 ounces semi sweet chocolate chips
- 1/2 cup walnuts chopped
Instructions
- Preheat the oven to 350°F. Grease a 9 x 9 baking dish or line it with parchment or foil.
- Add the caramels or caramel bits and the heavy cream to a small saucepan. Heat the caramel over low heat, stirring frequently, until the caramels are completely melted and smooth. Remove from heat and set aside.
- In a medium bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Pour the melted butter into the bowl and mix to combine.
- Press half of the oat mixture into the bottom of the prepared baking dish. Bake for 10 minutes (do not turn off the oven).
- Sprinkle the chocolate chips and walnuts over the baked crust, then pour the melted caramel over the top, spreading gently to cover. Sprinkle the remaining oat mixture over the top of the caramel (it’s okay if it doesn’t cover the caramel completely). Bake 15-20 minutes, until light brown.
- Remove the carmelitas from the oven and cool them completely before slicing and serving.
