Carne Asada Marinade

This carne asada marinade blends citrus juices with garlic, olive oil, cumin, jalapeño, and cilantro to impart a fresh, tangy, and mildly spicy flavor to steak. The acidic orange and lime juices help tenderize the meat while aromatic spices and herbs deepen its taste. It’s designed for marinating up to two pounds of steak before grilling or broiling.

Description

The carne asada marinade combines freshly squeezed orange and lime juices with minced garlic, olive oil, salt, black pepper, jalapeño, ground cumin, and chopped cilantro. The citrus components serve to tenderize the steak and provide bright acidity, complementing the savory and slightly spicy ingredients. Garlic and cumin add aromatic depth, while jalapeño introduces mild heat.

Meat is marinated in this mixture for at least two hours or up to ten, ensuring thorough flavor absorption. After marination, excess solids are scraped off before cooking. The original recipe recommends grilling or broiling the meat, and serving it sliced against the grain.
