Carne Asada Quesadillas (Steak Quesadillas) Recipe
Description
This recipe begins by sautéing diced onion and bell pepper in vegetable oil until tender and seasoned with salt and pepper. Meanwhile, chopped carne asada steak is prepared separately. Flour tortillas are warmed on a skillet, then layered on one half with shredded cheese, sautéed vegetables, and chopped meat. The tortillas are folded over, pressed lightly, and cooked a few minutes on each side until golden and crisp, with cheese melted inside.
The resulting quesadillas balance soft-chewy tortillas, melted cheese, tender cooked meat, and flavorful sautéed vegetables. Cooking on a skillet or comal promotes a lightly browned, crisp exterior. Salsa or guacamole make common accompaniments for serving.
For convenience, an air fryer method is provided to crisp quesadillas evenly using high heat and minimal oil. Adding water during veggie cooking can prevent burning while reducing oil usage. The quesadillas serve well as snack, appetizer, or light meal.
Ingredients
- 1 Tablespoons vegetable oil
- 1 cup onion diced
- 1 cup bell pepper diced, red or green
- salt according to taste
- black pepper according to taste
- 2 inch flour tortillas
- 1 cup cheese shredded, Oaxaca, Monterey Jack or mozzarella
- 2 cups carne asada chopped

Instructions
- Heat up a medium skillet over medium-high heat and add the vegetable oil.
- Add the diced onion and bell pepper to the skillet and cook for 3-5 minutes or until the vegetables are tender (see tip #1). Add salt and pepper according to taste. Set aside when cooked.
- Heat a separate large skillet or comal over medium heat. Place a flour tortilla and layer the ingredients on half of it: start with shredded cheese, sauteed veggies, then meat. Make sure to spread everything evenly.
- Fold the other half of the tortilla over the steak mixture, pressing down gently.
- Repeat the process with the remaining tortilla, veggies, cheese, and asada mixture.
- Cook the tortilla for 2-3 minutes on each side or until the cheese is melted and the tortilla is lightly browned and crispy.
- Cut the steak quesadillas into wedges and serve hot.

Notes
- When sautéing onions and peppers, add a tablespoon or two of water if they start to burn before softening to cook them evenly while using less oil.
- Air fryer can be preheated to 400°F; place assembled quesadillas in basket without overlapping and cook 5-6 minutes until cheese melts and tortillas crisp.
- Let quesadillas rest a minute after cooking before slicing to help them hold shape.
