Carne Asada Recipe

Carne Asada is a grilled flank steak marinated in a mixture of citrus juices, soy sauce, garlic, chipotle pepper, and warm spices including chili powder, cumin, and paprika. The marinade tenderizes and imparts a smoky, tangy flavor. After at least 24 hours of marinating and tenderizing by piercing and pounding, the steak is grilled to medium doneness and sliced against the grain to maximize tenderness and juiciness.

Description

This Carne Asada Recipe uses a marinade of olive oil, orange, lemon, and lime juices combined with soy sauce, garlic, chipotle pepper in adobo, and seasonings like chili powder, cumin, paprika, oregano, and black pepper. The flank steak is pierced with a fork and pounded to an even thickness to allow the marinade to penetrate and to ensure even grilling.

Marinated for at least 24 hours to develop flavor and tenderize the meat, the steak is then grilled over medium heat for 5-6 minutes per side to achieve medium doneness. The reserved marinade is warmed and served alongside to accompany the cooked meat.

Slicing the steak against the grain helps break up muscle fibers, resulting in a more tender bite. This carne asada is well-suited for serving as a main dish, in tacos, or alongside grilled vegetables and rice.

Ingredients

  • 1/2 cup olive oil
  • 1/2 cup orange juice
  • 1/2 cup lemon juice
  • 1/2 cup lime juice
  • 1/2 cup soy sauce
  • 4 cloves garlic minced
  • 1 chipotle pepper canned adobo
  • 1 tablespoon chili powder
  • 1 tablespoon cumin ground
  • 1 tablespoon paprika
  • 1 teaspoon oregano dried
  • 1 tablespoon black pepper
  • 4 pounds flank steak

Instructions

  1. Add all the ingredients except for the steak into a blender and blend until emulsified, then keep 1 cup of it reserved in the fridge for serving when cooked.
  2. Add the rest to a resealable container and place your steak on a cutting board.
  3. Using a meat tenderizer or fork pierce the steak(ALL OVER) then using a mallet get it to a 1/2" even thickness before adding it to the marinade and letting it marinade at least 24 hours but preferably 48 hours).
  4. Grill on medium heat for 5-6 minutes on each side for medium doneness and while cooking warm your remaining marinade to serve with your cooked carne asada which is served cut against the grain of the meat (do not cook this cut of meat more than a medium doneness).
