Carne con Papas (Beef and Potato Stew)
Description
Carne con Papas (Beef and Potato Stew) brings together cubed beef simmered gently in a fragrant base of onion, garlic, paprika, cumin, and green bell pepper. The initial sauté softens the aromatics and coats the meat for deep flavor. Adding tomato sauce and white wine introduces acidity and complexity while beef stock keeps the broth rich. Over at least 90 minutes, the meat becomes tender, infused with the spice mix and simmering liquids.
Potatoes added near the end cook until soft without falling apart, absorbing the stew’s savory essence. Capers contribute a pleasant tang that contrasts with the mild seasoning, enhancing the overall balance. This stew may be served alone or paired with white rice, which accommodates its robust sauce and tender chunks.
