  • 2 lb beef cubed, stewing
  • 4 tablespoons neutral cooking oil generic cooking oil
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 onion , diced
  • 3 cloves garlic , crushed
  • 1 green bell pepper , diced
  • 1 cup tomato sauce
  • 1 cup white wine
  • 1 cup beef stock (or water)
  • 2 lb potato peeled and cut into large chunks
  • 5 tablespoons capers
  • salt
  • black pepper

Instructions

  1. In a large hot skillet with oil, add pepper and onion. Sauté for 5 minutes, then add the garlic, paprika, cumin and salt. Cook for another 3 minutes.
  2. Add meat and brown on all sides for 5 minutes.
  3. Pour the tomato sauce and stir. Add the wine, water (or beef broth) and simmer, covered for at least 90 minutes, or until meat is tender.
  4. Add the potatoes, and capers. Cook for another 30 minutes or until the potatoes are tender.
  5. Serve by itself or with white rice.
