Description
This recipe begins by sautéing chopped onion and minced garlic in oil until softened, then browning thin slices of chuck steak. Chopped fresh Roma tomatoes are added and cooked down to release juices. Water or beef broth is incorporated and brought to a boil, during which any scum is skimmed off to keep the broth clear.
Minced jalapeño peppers are added to introduce heat, and the mixture is covered and simmered for 40 to 50 minutes to tenderize the beef. Afterward, medium peeled and cubed potatoes are added and cooked until tender, thickening the sauce as it reduces.
The dish is seasoned with salt and pepper to taste before serving hot. The thin slicing of beef across the grain helps achieve tenderness and quicker cooking, while fresh tomatoes provide a natural sweet acidity that complements the spicy jalapeño and savory broth.
Carne Guisada works well as a main dish accompanied by rice or tortillas, offering a comforting and filling meal. Using fresh tomatoes is preferred, but tomato sauce can be substituted if needed.
Ingredients
- 1 tablespoon canola oil
- 1 onion peeled and chopped
- 2 cloves garlic peeled and minced
- 2 pounds chuck steak sliced thinly
- 4 Roma tomato large, chopped
- 1 jalapeno pepper seeded and minced
- 1 ½ cups water or beef broth
- 2 potato medium, peeled and cubed
- salt to taste

Instructions
- In a dutch oven or wide skillet over medium heat, heat oil. Add onions and garlic and cook until softened.
- Add beef and cook until lightly browned.
- Add tomatoes and cook, mashing with the back of a spoon, until softened and release juice.
- Add water or broth. Bring to a boil, skimming scum that floats on top.
- Add chili peppers.
- Lower heat, cover, and simmer for about 40 to 50 minutes or until beef is tender, adding more water in ½ cup increments as needed.
- Add potatoes and cook for about 8 to 10 minutes or until tender and sauce is reduced and thickened.
- Season with salt and pepper to taste. Serve hot.
Notes
- Slice the beef thinly and across the grain to ensure tenderness and even cooking.
- Fresh Roma tomatoes are recommended for flavor, but tomato sauce can be used as a substitute.
