Carnival Chocolate Melting Cake

Carnival Chocolate Melting Cake is a rich, individual dessert baked in small ramekins, creating a cake with a soft, cakey top and a molten, gooey chocolate center. The batter combines melted dark chocolate and butter, eggs, sugar, vanilla, and flour to create a dense yet tender texture, finished with a dusting of powdered sugar and served alongside ice cream or whipped cream for contrast.

Description

This cake is prepared by melting dark chocolate chips with butter, then blending the mixture with whisked eggs, sugar, vanilla extract, and flour to form a smooth batter. The batter is portioned into four 7-ounce ramekins and baked at 375°F for about 14 minutes. This timing ensures the outer layer is set and cakey while the center remains molten and pudding-like.

The final dessert features a slightly crisp top with a spongy consistency and a warm, flowing chocolate interior. It is lightly dusted with powdered sugar for a subtle sweetness and served warm with ice cream or whipped cream to balance the richness.

The ramekin baking format allows for controlled portions and the characteristic contrast between textures, emphasizing the molten center. Careful monitoring during baking is important to achieve the right doneness.

This dessert works well for special occasions or any time a chocolate indulgence is desired.

Ingredients

Servings
  • ¾ cup dark chocolate chips
  • ¾ cup butter
  • 4 egg room temperature
  • ¾ cup sugar
  • teaspoon vanilla extract
  • ¼ cup flour
  • powdered sugar for dusting
  • Ice cream for serving
  • whipping cream for serving

Instructions

  1. Heat oven to 375 degrees F. Melt chocolate chips and butter in a small saucepan. Set aside to cool for 10 minutes.
  2. In a separate bowl, whisk eggs and sugar together.
  3. Add vanilla and flour. Whisk until flour is well mixed in.
  4. Once the chocolate has cooled, combine it with the egg mixture.
  5. Fill 4 (7-ounce) ramekins about three-fourths full with chocolate batter. Bake for 14 minutes.
  6. Check to make sure the edges of the ramekin are cooked and the top of the cakes appear to be cooked as well.
  7. Once cooled, sprinkle the cakes lightly with powdered sugar.
  8. Serve with ice cream or whipped cream.

Notes

  • Use 7-ounce ramekins to ensure proper cooking and texture contrast.
  • Watch baking time carefully; the cake's center should remain gooey like pudding, not fully set.
  • Test doneness by inserting a toothpick about halfway; the bottom half should be moist and not clean.
