Ingredients

  • 1 cup yellow mustard*
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1 Tbsp Worcestershire sauce 
  • 2 tsp Tabasco sauce
  • 1 tsp molasses
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp each, coarse salt and fresh cracked black pepper

Instructions

  1. Put all the ingredients into a heavy bottomed saucepan and whisk to combine.
  2. Heat to a simmer, stirring often, then turn down the heat and gently bubble for about 5 minutes. Stir often so the thick sauce doesn't scorch.
  3. While the sauce is cooking give it a taste and feel free to adjust any of your ingredients. It is a tangy sauce, so if it's a bit too tangy for you, add a bit more honey or brown sugar. If you'd like more heat, add more hot sauce, etc.
  4. Let the sauce cool completely and then pop it into a jar or other airtight container and refrigerate until needed.
  5. Your homemade Carolina Gold bbq sauce will last up to a month in the refrigerator, but always use your best judgment to determine if the sauce is still safe to consume. When in doubt, it's better to err on the side of caution and discard the sauce. You can freeze for longer storage.

Notes

  • Double or triple the recipe as needed. A single recipe is enough for 2 racks of ribs plus extra for serving.
  • * You do need yellow mustard for this recipe. Yellow mustard gets its vibrant color from finely mustard seeds combined with turmeric, which gives it the characteristic yellow hue. Compared to other types of mustard, yellow mustard has a milder flavor and is less pungent and spicy than Dijon mustard or brown mustard, which aren't appropriate for Carolina Gold sauce.
