Carrot Bread Recipe

This delicious Carrot Bread recipe combines grated carrots and nuts baked inside a moist loaf full of warm spices. This simple quick bread is made in less than 10-minutes!

Ingredients

  • 2 cups all purpose flour
  • 1 cup sugar
  • 1 ½ teaspoons baking soda
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon salt
  • ½ teaspoon pumpkin pie spice
  • 2 ½ cups grated carrots about 3-4 medium carrots
  • 3 large eggs
  • ¾ cup vegetable oil (or canola oil)
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • ¾ -1 cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees. Lightly butter and flour a loaf pan, then set the pan aside.
  2. In a large bowl, combine the flour, sugar, baking soda, cinnamon, salt, and pumpkin pie spice.
  3. Whisk the ingredients together and then set the bowl aside.
  4. In another large bowl, stir together the carrots, eggs, oil, milk, and vanilla, until they are well combined.
  5. Add in half of the flour mixture, and stir to combine, then add in the remaining half of the flour. Be sure to scrape the sides of the bowl as you mix together so all of the ingredients are incorporated.
  6. Pour in the chopped walnuts, and stir until they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan, and place in the center of the oven, on the center rack.
  8. Bake for 55-60 minutes. Bread will be done when you insert a toothpick in the center of the loaf, and it comes out clean.

Notes

  • Notes:
  • Be sure to peel the carrots before shredding them.
  • This bread is so moist and full of flavor, but if you like raisins, add ½ cup to the recipe for additional flavor.
  • This recipe makes one traditional size loaf of bread, and can be cut into 14-16 slices, depending on thickness.
