- 1/4 cup cream cheese at room temperature
- 1/2 cup coconut toasted for garnish, shredded
- 1 1/2 teaspoons baking soda
- 1/3 cup sugar
- 1/2 tablespoon butter (at room temperature)
- 1 1/4 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon vanilla extract
- 2 teaspoons cinnamon
- 1 egg at room temperature, large
- 2 tablespoons milk whole
- 1/2 teaspoon salt
- 1 cup powdered sugar depends on how sweet you want it!!, 4oz / 115g
- 2 cups sugar
- 4 egg room temperature
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups carrot peeled and grated
- 3/4 cup raisins 3 3/4oz/106g
- 3/4 cup coconut shredded
- 1 cup pineapple crushed and strained
