Carrot Cake Overnight Oats

Ingredients

  • 1/3 cup rolled oats
  • 1/3 cup almond milk unsweetened vanilla
  • 1/4 cup carrot fresh grated
  • 1 tbsp raisin or chopped dates
  • 1/2 tsp chia seeds
  • 1/2 tbsp pure maple syrup
  • 1/4 tsp cinnamon
  • nutmeg pinch
  • ginger pinch
  • 1/4 cup Greek yogurt divided (I use Stonyfield, non-fat, vanilla
  • 2 tbsp whey protein powder divided, Jay Robb's vanilla flavor
  • 1 tsp pecans chopped

Instructions

  1. In a small bowl, mix yogurt and protein until smooth.  Set aside.
  2. In a bowl, combine all other ingredients except chopped pecans.
  3. Layer oat mixture and 1/2 of yogurt mixture in a resealable container or mason jar.
  4. Refrigerate overnight.  Top with other 1/2 of yogurt mixture and chopped pecans before serving.
