Carrot Oatmeal Breakfast Bars

Carrot Oatmeal Breakfast Bars combine grated carrot and apple with oats, raisins, mixed seeds, shredded coconut, cinnamon, butter, brown sugar, and maple syrup. The mixture is pressed into a pan and baked until the edges are golden, resulting in moist, slightly chewy bars with a sweet-spiced flavor. These bars offer a wholesome, portable breakfast or snack.

Description

Carrot Oatmeal Breakfast Bars start with shredding carrots and apple, which provide moisture and natural sweetness. Excess liquid is squeezed out to prevent sogginess. Butter, brown sugar, and maple syrup are melted together to bind the mixture and add richness along with sweetness.

The dry ingredients include oats, raisins, mixed seeds, shredded coconut, and cinnamon, which contribute texture and flavor complexity. Combining the wet and dry ingredients thoroughly and pressing firmly into a greased pan leads to bars that hold their shape well after baking. Baking at 350°F until golden creates a slightly crispy edge while keeping the interior tender and flavorful.

This recipe makes a convenient breakfast or snack that can be sliced and taken on the go. The blend of carrot, apple, spices, and seeds provides a wholesome balance of nutrients and a naturally sweet taste without artificial additives. The bars are simple to prepare and suitable for making ahead of time.
