Description

Ingredients
- 3 lbs carrot peeled and sliced
- 1 1/2 cups butter softened
- 6 egg
- 1 tbsp vanilla extract
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- 3 cups sugar
Instructions
- Boil carrots for approximately 15 minutes, until tender. Drain.
- Preheat oven to 350
- In a food processor with knife blade, add all ingredients except sugar, and process until smooth.
- Add to a large bowl and fold in sugar.
- Pour into two, lightly greased, 8x8 pans (or one 9x13). Baked at 350 for 1 hour. Sprinkle with sifted powdered sugar afterwards and serve warm. Enjoy!
