Cashew Chicken Lettuce Wraps
Description
This recipe prepares bite-sized chicken pieces seasoned lightly with salt and pepper, then cooked in a skillet until done. A sauce made from chicken stock, soy sauce, fresh ginger, hoisin sauce, rice vinegar, and cornstarch is stirred in and heated until it thickens, coating the chicken evenly. Minced garlic adds aromatic depth just before the sauce is added. Sriracha hot sauce introduces optional heat to customize the flavor.
The cashews contribute a crunchy texture and mild nutty flavor that complements the savory sauce. Finally, chopped green onions are stirred in for freshness and added more as garnish.
To serve, spoon the saucy chicken mixture into washed, sturdy lettuce leaves such as romaine or bibb, which act as edible cups. These wraps offer a handheld, fresh way to enjoy cooked chicken with a bright and tangy sauce.
