Cashew Chicken Stir Fry

Cashew Chicken Stir Fry combines tender chicken breast with crisp red pepper and snow peas, all coated in a thickened soy-based sauce with a hint of sesame and ginger. The roasted cashews add a satisfying crunch, complementing the savory stir-fry flavors. This dish works well served over noodles or alone, providing a balanced texture and rich taste from the sauce and aromatics.

Description

The Cashew Chicken Stir Fry features chopped chicken breast seared until browned, then cooked with garlic and either ground or fresh grated ginger for freshness. Crisp vegetables like red pepper and snow peas are added and stir-fried until just tender, preserving their snap. The sauce is a blend of soy sauce, chicken stock, sesame oil, ground ginger, cornstarch, and sugar that thickens quickly once introduced, coating the ingredients nicely. Roasted cashews finish the dish with a nutty texture contrast.

The finished stir-fry can be served on its own or over noodles such as vermicelli, making it a versatile option for a satisfying meal with both protein and vegetables. The interplay between the aromatic sesame oil and mild sweetness from sugar balances the savory elements.

Adjust the sesame oil amount according to preference to deepen the flavor. Fresh ginger may be fried with garlic for more pungency or replaced with ground ginger in the sauce. Adding the sugar to taste helps balance the savory and slightly tangy-salty notes of the sauce mixture.

  • 3/4 cup chicken stock
  • 1-2 teaspoons sesame oil
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon ground ginger (or 1 tsp fresh grated ginger, which you will fry in Step 2)
  • 1 tablespoon white sugar (to taste!)

Cashew Chicken Ingredients

  • 2 cups snow peas
  • 1/2 cup cashew roasted

  3. Add in your vegetables and fry until tender-crisp.
  4. Take the sauce mixture and add to the vegetables, stirring until the mixture thickens slightly, 1-2 minutes.
  5. Add in the cashews, warm slightly. Serve alone or over pasta or vermicelli noodles.

Notes

  • Adjust sesame oil quantity from 1 to 2 teaspoons to increase flavor depth.
  • Fresh ginger can be fried with garlic for a more pronounced taste instead of ground ginger in the sauce.
  • Serve the stir fry hot over noodles or plain for a hearty meal.
