Cashew Pesto Pasta

Cashew Pesto Pasta features cooked noodles tossed with a basil pesto made from fresh basil, cashews, garlic, Parmesan cheese, olive oil, lemon juice, and seasoning. The cashew-based pesto offers a creamy texture and subtle nutty flavor, complementing the fresh herbaceous notes of basil. This simple pasta dish comes together by combining the pesto with cooked pasta, optionally topped with extra cheese or nuts for added texture.

Description

This recipe prepares pesto by blending fresh basil leaves with cashews, minced garlic, Parmesan cheese, extra virgin olive oil, a touch of lemon juice, salt, and black pepper until smooth and creamy. The balance of ingredients creates a rich, flavorful sauce with a smooth texture and fresh herbaceous aroma from the basil.

Cooked pasta noodles are drained and combined with the cashew pesto, allowing the sauce to coat each strand evenly. The lemon juice adds brightness and a subtle acidity that lifts the flavors while the Parmesan contributes a salty depth.

Cashew Pesto Pasta is served simply with optional toppings like additional Parmesan cheese or cashews for added texture. It works well as a vegetarian main or side dish and can be enhanced by adding proteins such as chicken, shrimp, or steak as noted in the recipe notes.
