Ingredients
Pasta
- 2 egg
- 200 gms all-purpose flour 7 oz
Filling
- 200 gms Italian sausage 7 oz
- 100 gms mortadella 3.5 oz
- 80 gms breadcrumb ¾ cup
- 20 gms parmigiano reggiano finely grated, 3 ½ tbsp
- 1 egg
- 2 tbsp milk
- 1 garlic clove
- 2 tbsp parsley chopped
- salt to taste
Sauce
- 80 gms butter 5 ½ tbsp
- 6 sage leaves
- 4 speck cubed, or pancetta, 1 cm - ½ inch thick slices
- parmigiano reggiano finely grated, to serve

- If some pasta sheets remain, wrap them individually in cling wrap, then place them in a ziploc bag and freeze them for later use.
