Cast Iron Chicken Fajitas

These Cast Iron Chicken Fajitas are perfectly seasoned with a blend of chili peppers, cumin, warming spices, and a touch of lime. They are super easy to make and easily cooked on your grill or smoker, or on your stovetop.

Ingredients

Servings
  • 2 chicken breast cut into slices, large
  • 1 onion sliced
  • 2 bell pepper sliced
  • olive oil

Seasoning

  • 1 teaspoon Hatch chile powder mild
  • ½ teaspoon California chile powder
  • ½ teaspoon chile powder New Mexico variety
  • ½ teaspoon salt fine kosher
  • ½ teaspoon onion powder
  • ½ teaspoon white sugar
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon lime powder May substitute Citric Acid, or crystallized lime
  • ¼ teaspoon oregano
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon Coriander
  • ¼ teaspoon cayenne pepper

Instructions

  1. Prepare the seasoning by mixing together the fajita seasoning ingredients.
  2. Drizzle the chicken and veggies with a little olive oil then liberally apply the seasoning.
  3. Heat a large pan of skillet over medium high heat and add 2 tablespoons of oil.
  4. Cook the veggies and chicken until the chicken reaches and internal temperature of 165 degrees (about 5-7 minutes). For softer veggies add the veggies a few minutes before adding in the chicken.
  5. Serve warm on flour tortillas with your favorite toppings.
