Cauliflower Fried Rice
Description
To make Cauliflower Fried Rice, cauliflower is pulsed in a food processor or shredded until it resembles rice-sized grains. Peas, carrots, and minced garlic are sautéed with sesame oil in a skillet until tender and aromatic. Whisked eggs are added to one side of the pan, cooked briefly, then scrambled and mixed into the vegetables and cauliflower rice.
Soy sauce is stirred in to season the dish, with crushed red pepper flakes optional to add a mild spicy kick. Green onions finish the dish with a fresh note and color contrast. The final dish resembles classic fried rice textures but with the lightness and subtle flavor of cauliflower and vegetables.
Frozen peas and carrots should be defrosted and patted dry to reduce moisture that might make the rice soggy. The dish is best served immediately to preserve texture and warmth.
Ingredients
- 1 cauliflower head
- 2 tablespoons sesame oil
- 1 cup pea thawed, see note, frozen
- 1 cup carrot thawed, see note, frozen
- 2 teaspoons garlic minced
- 2 egg whisked
- ¼ cup soy sauce
- crushed red pepper flakes optional, pinch
- green onion chopped
Instructions
- Pulse cauliflower in a food processor until it resembles small grains of rice OR shred with a grater.
- Combine cauliflower, peas and carrots, garlic, and sesame oil in a large skillet.
- Saute for 5-7 minutes til tender and fragrant.
- Push cauliflower and veggies to one side of the side of the pan. Add whisked eggs to the empty side of the pan. Allow to cook for about 2 minutes, then break up with a wooden spoon or spatula and stir into cauliflower rice.
- Stir in soy sauce, crushed red pepper flakes (optional) and green onions. Serve immediately - enjoy!
Notes
- Thaw frozen peas and carrots completely then pat dry with paper towels to remove excess moisture before cooking.
