Cauliflower Hummus Recipe
Description
This Cauliflower Hummus starts by roasting cauliflower florets coated lightly in olive oil until tender and browned. A few florets are reserved for garnish. Roasting enhances the natural sweetness and softens the vegetable for blending.
The remaining roasted cauliflower is combined with tahini, garlic, lemon juice, olive oil, sea salt, and cumin, then pureed in a food processor until mostly smooth. Adding cold water a tablespoon at a time adjusts the texture to a creamy but not watery consistency.
The finished hummus is allowed to cool before serving. Optional toppings such as roasted cauliflower pieces, olive oil, cumin, sumac, sesame seeds, and parsley can be added for extra flavor and presentation. The recipe takes advantage of cauliflower’s mild flavor to create a lighter hummus variation.
Ingredients
- 1 large cauliflower broken into florets, head
- 2 tablespoons olive oil divided, 1 teaspoon
- 4 tablespoons tahini
- ½ teaspoon salt sea salt
- ¼ teaspoon cumin
- 2 cloves garlic
- lemon juice juice from 1 lemon
- water see notes, cold
- cauliflower optional toppings; roasted cauliflower florets

Instructions
- Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Toss the cauliflower florets in 1 teaspoon of olive oil and place them on the baking sheet. Roast the cauliflower for 20 minutes, or until soft and brown in a few places.
- Reserve a few small pieces of the roasted cauliflower to garnish, then place the rest of the cauliflower and the remaining 2 tablespoons of olive oil, tahini, sea salt, cumin, garlic, and lemon juice in your food processor or high-powered blender. Blend on high until mostly smooth. Add water, 1 tablespoon at a time, and continue to blend until the hummus is very smooth.
- Allow the cauliflower hummus to cool then serve with any or all of the optional toppings.
Notes
- The amount of water added depends on the cauliflower size and lemon juiciness, commonly about ¼ cup.
