Cevapcici Sausages

Cevapcici Sausages are small, hand-shaped sausages made from a seasoned mix of ground pork and beef with sautéed onions. Baked at a moderate temperature, they develop a browned exterior while remaining juicy inside. This recipe includes a recommended seasoning test to ensure optimal flavor before forming all sausages. Serving them with boiled potatoes and mustard complements their savory profile, making a wholesome meal.

Description

The Cevapcici Sausages recipe blends fatty ground pork and lean ground beef with caramelized onions, an egg, salt, and pepper. The onions are fried until golden to deepen their sweetness and then mixed into the meat. After seasoning adjustment through a test patty, the mixture is shaped into small sausages about 3x1 inches and baked at 360°F for 25 minutes. This cooking method allows the sausages to cook evenly while retaining moisture.

These sausages feature a lightly seasoned, savory profile with a slight sweetness from the fried onions and a tender but firm texture from the mixture. Traditionally served warm with boiled potatoes and a topping of melted butter, they are also accompanied by a dollop of yellow mustard and fresh onion rings, which add sharpness and contrast.

Alternatively, the sausages can be pan-fried for a browned crust on all sides. Testing seasoning by pan-frying a small portion beforehand helps achieve balanced taste. This recipe yields around 4-6 servings and showcases a methodical approach to crafting flavorful, well-textured sausages.

  • 1 pound ground beef lean
  • 2 medium onion peeled and chopped
  • 1 Tablespoon pork lard (or sunflower / canola oil)
  • 1 egg
  • 2 teaspoons salt
  • ½ teaspoon black pepper ground

Instructions

  1. Peel and roughly chop 2 medium onion. In a pan over medium heat, melt 1 Tablespoon pork lard and fry the onions until they turn golden brown. Set aside to cool.
  2. Place 1 pound ground pork and 1 pound ground beef in a mixing bowl. Add the fried onions and 1 egg. Season with 2 teaspoons salt and ½ teaspoon ground black pepper to taste.
  3. With hands moistened in cold water, shape the mixture into small sausages, approximately 3x1 inches (7.5x2.5 cm) each.
  4. Preheat the oven to 360 °F.
  5. Line a baking tray with parchment paper and arrange the Cevapcici sausages on it. Bake in the preheated oven for 25 minutes.
  6. Serve warm with boiled potatoes topped with melted butter. Add a dollop of yellow mustard and garnish with fresh onion rings.

Notes

  • The basic recipe yields approximately 4 to 6 servings.
  • To ensure proper seasoning, cook a small test patty before shaping all sausages; adjust salt and pepper accordingly.
  • Instead of baking, the sausages can be pan-fried in oil until browned on all sides.
