Description
This Chai-Spiced Chia Pudding combines chia seeds with Medjool dates, water or a non-dairy milk, and chai spices including cinnamon, ground ginger, cloves, and vanilla extract. The ingredients are blended together until smooth then chilled to let the chia seeds thicken the mixture into pudding consistency. The pudding has a mildly spiced, sweet flavor balanced by the natural sugars of dates.
The texture is creamy and slightly gelled from the chia seeds absorbing moisture. Blending breaks down the dates and seeds for a smooth base. Chilling enhances the flavor melding and sets the pudding for easy serving.

Ingredients
- 3/4 cup water (see note below)
- 2 tablespoons chia seeds
- 3 Medjool dates pitted, soft
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- ground cloves pinch
- 1/4 teaspoon vanilla extract (alcohol-free, if desired)
Instructions
- Combine all of the ingredients in a high-speed blender and blend until completely smooth. Adjust any ingredients to taste, then pour the mixture into a bowl and chill it in the fridge for at least 20 minutes before serving. (The longer it chills, the better the flavor!)
- Feel free to make a large batch and pour it into individual containers to store it the fridge for up to 5 days. It makes a great breakfast or snack on the go!
Notes
- If you lack a high-speed blender, soak the chia seeds and dates for 15 minutes beforehand to soften them for easier blending.
- Alternatively, replace dates with 2 tablespoons of pure maple syrup and reduce the liquid slightly to balance the extra sweetness and moisture.
- Using a non-dairy milk instead of water enhances creaminess, especially if skipping the blending step.
