Charlie Chan (Yellow Cab) Recipe

Charlie Chan is a savory noodle dish featuring chicken strips, shiitake mushrooms, onions, garlic, and a distinctive sauce made with oyster sauce, Char Siu sauce, peanut butter, and chili flakes. The spaghetti noodles are cooked al dente and tossed with a thick, flavorful sauce and stir-fried chicken and vegetables. Toasted peanuts add crunch and contrast to the tender noodles and sauce. This recipe balances salty, sweet, and spicy notes with a creamy texture from peanut butter.

Description

This Charlie Chan recipe starts by marinating chicken strips in soy sauce and cornstarch, which helps tenderize and adds flavor. Spaghetti noodles are boiled until nearly al dente, then drained, reserving some pasta water. In a hot wok, peanuts are toasted until golden and set aside, then onions and garlic sautéed with shiitake mushrooms to build aroma.

The chicken is stir-fried until cooked and slightly charred for added texture. A sauce combining oyster sauce, Char Siu sauce, peanut butter, soy sauce, sesame oil, chili flakes, and optional brown sugar is added to the wok. Some reserved pasta water is used to deglaze and help develop a thick, rich sauce that coats the noodles evenly when combined.

The cooked pasta is mixed with the sauce and chicken mixture, heated briefly to meld flavors. Garnishing with green onions and peanuts adds freshness and crunch. This dish offers a blend of savory, slightly sweet, creamy, and mildly spicy flavors paired with tender noodles and meat, typical of fusion Asian-inspired fare.

Ingredients

Servings
  • ½ pound chicken breast cut into strips, or thigh fillet
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 9 ounces spaghetti uncooked
  • 8 cups water
  • 1 tablespoon salt
  • 3-4 tablespoons vegetable oil
  • ½ cup peanut raw
  • 1 medium onion chopped finely
  • 3 tablespoon garlic minced finely
  • ½ cup shiitake mushrooms (if using dry shiitake, hydrate it in water first.) cut into thin strips

SAUCE

  • ½ - 1 teaspoon chili flakes adjust to preference
  • ¼ cup oyster sauce
  • ¼ cup Char Siu sauce (Lee Kum Kee)
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon brown sugar optional
  • green onions cut into 2-inch lengths

Instructions

  1. In a bowl, combine the chicken, soy sauce and cornstarch. Mix well. Set aside until ready to use.
  2. Bring 8 cups of water into a rolling boil over high heat. Add salt. Add the spaghetti noodles and cook until almost al dente. Reserve ½ cup of the pasta water and discard the rest. (drizzle some oil to the pasta if they are too sticky).
  3. In a wok or large pan, heat oil over medium heat. Add the peanuts and cook, stirring regularly until they turn golden brown. Using a slotted spoon, remove the peanuts from the oil and transfer them in a bowl. Set it aside for later.
  4. In the same pan, sauté onions and garlic until limp and aromatic. Add the mushrooms and cook for half a minute. Add the chicken pieces and stir-fry until cooked through and slightly charred.
  5. Add the rest of the ingredients for the sauce to the pan and stir until it forms a thick sauce. Add some (¼ - ½ cup) pasta water to deglaze.
  6. Add the cooked pasta and toss to cover it with sauce cook for a minute or two to let the pasta cook until al dente and absorb the flavors of the sauce. Turn the heat off. Add back the roasted peanuts and toss again.
  7. Transfer to serving pan or plates. Garnish with chopped green onions.
