Cheat's Croque Madame

Cheat's Croque Madame is a toasted ham and Gruyère sandwich layered with a Dijon mustard and maple syrup spread, topped with a lightly fried egg. Description

Cheat's Croque Madame is created using buttered multiseeded bread slices grilled to golden crispness in a sandwich press or toaster. A mixture of Dijon mustard and maple syrup is spread on the unbuttered sides, lending a subtle tangy sweetness. Layers of grated Gruyère cheese and slices of ham are added in between, then topped with the remaining buttered bread slices before toasting.

While the sandwich cooks, eggs are fried gently in rapeseed oil until the whites are set but the yolks remain runny. Placing these eggs atop the toasted sandwiches adds richness and moisture, complementing the crunchy bread and melted cheese.   • 4 lices multi-seeded bread
  • 40 g butter softened
  • 2 tsp rapeseed oil
  • 2 lices ham
  • 3 tsp Dijon mustard
  • 1 tsp maple syrup
  • 80 - 100 g gruyere cheese grated
  • 2 egg free range

Instructions

  1. Butter the bread and then place buttered side down.
  2. Mix the Dijon mustard and maple syrup together, then spread on 2 of the slices of bread (unbuttered side).
  3. Then add half the Gruyère to these 2 slices, followed by the ham slices and finish with the rest of the Gruyère.
  4. Close the sandwiches with the other 2 slices of bread (buttered side up).
  5. Pre-heat sandwich press/toaster and toast sandwiches until golden.
  6. Meanwhile heat 1 tsp of oil in small frying pan on a medium heat and fry 2 eggs until the whites are cooked and the yolk still runny.
  7. Once the sandwiches are toasted top with an egg and enjoy your Cheat's Croque Madame!

Notes

  • Fry eggs over medium heat gently to avoid a brown or tough underside.
