Chebureki (Fried Dumplings)

Chebureki are savory fried dumplings made by filling raw flour tortillas with a seasoned mixture of ground beef, ground chicken, onion, egg, salt, and pepper. The tortillas are folded, sealed, and fried until golden brown, resulting in a crispy exterior with a juicy, flavorful meat filling inside.

Description

Chebureki use a simple dough base of raw flour tortillas folded over a thin layer of mixed ground beef and chicken seasoned with finely chopped onion, egg, salt, and pepper. The filling is spread thinly on half of the tortilla, then folded and sealed with a fork to hold the contents in place during frying.

Cooking involves frying the sealed dumplings in hot oil over medium-low heat until both sides develop a golden brown, crispy crust. The result is a contrast between a crunchy outer shell and a moist, savory meat interior that cooks through during frying.

Chebureki are best served fresh and hot, drained on paper towels to remove excess oil. They are handheld and make a satisfying snack or appetizer. The combination of ground beef and chicken adds flavor complexity and moisture, while the thin tortilla dough crisps up nicely.
