Description
Chebureki use a simple dough base of raw flour tortillas folded over a thin layer of mixed ground beef and chicken seasoned with finely chopped onion, egg, salt, and pepper. The filling is spread thinly on half of the tortilla, then folded and sealed with a fork to hold the contents in place during frying.
Cooking involves frying the sealed dumplings in hot oil over medium-low heat until both sides develop a golden brown, crispy crust. The result is a contrast between a crunchy outer shell and a moist, savory meat interior that cooks through during frying.
Chebureki are best served fresh and hot, drained on paper towels to remove excess oil. They are handheld and make a satisfying snack or appetizer. The combination of ground beef and chicken adds flavor complexity and moisture, while the thin tortilla dough crisps up nicely.
Ingredients
- 6 flour tortillas raw
- 1/2 lb ground beef
- 1/2 lb ground chicken
- 1/2 onion finely chopped, large
- 1 egg
- 1/2 tbsp salt adjust to taste
- 1 tsp black pepper adjsut to taste
- neutral cooking oil for frying, generic cooking oil
Instructions
- In a large mixing bowl, combine the ground meat with the egg, chopped onion, salt, and pepper. Place a couple of tablespoons of the filling on one side of the tortilla and press the filling into a thin layer. Fold the tortilla over to cover the filling.
- Press a fork alongside the open edge of the tortilla to seal the filling inside. Repeat the process until all your tortillas are filled and sealed.
- Preheat the oil in a skillet over medium-low heat. Fry the chebureki one or two at a time depending on the size of your skillet until golden brown on both sides.
- Remove the cooked chebureki from the skillet and let them rest on paper towels to absorb the excess grease. Enjoy immediately!
