Cheese Fondue
Description
This Cheese Fondue recipe starts by grating Emmentaler and Swiss cheeses. Shallots are sautéed in olive oil until tender, then cream cheese and half and half are added and stirred to a smooth base. Shredded cheeses are gradually added in thirds over low heat until fully melted, creating a creamy texture.
Seasoned with salt, white pepper, and nutmeg, the fondue has a balanced savory and mildly spiced flavor. The warm, melted cheese mixture is served with prepared sides such as cubed baguette, Granny Smith apples, broccoli florets, cherry tomatoes, diced bell peppers, and summer sausage, all cut to bite-sized pieces for easy dipping.

Ingredients
- 8 ounce Emmentaler cheese or gruyere cheese - grated, block
- 8 ounce swiss cheese grated, block
- 1 teaspoon olive oil
- ¼ cup shallot finely diced
- 8 ounces cream cheese cubed
- 1 ½ cups half and half
- 1 teaspoon salt
- 1 teaspoon white pepper
- nutmeg or ¼ teaspoon ground nutmeg, fresh grated
Sides for dipping
- baguette sliced into cubes
- apple sliced into cubes, Granny Smith
- broccoli florets
- cherry tomato
- bell pepper diced into 1 inch cubes
- summer sausage or salami - sliced into cubes
Instructions
- Grate the emmanteler and swiss cheese into a large bowl, and set aside.
- Add the olive oil to a fondue pot, or medium saucepan on the stove, over medium heat.
- Once the oil is hot, add the finely chopped shallots and cook for 3-4 minutes.
- Reduce the heat to medium low, then add the cream cheese and half and half, and stir until it’s smooth.
- Reduce the heat to low, then add ⅓ of the shredded cheese and stir until it’s smooth and melted. Repeat with another ⅓ of the cheese, stirring again until melted, then with the remaining ⅓ of cheese, until all of the cheese is melted.
- Season with the salt, pepper and nutmeg.
- Serve with any of the optional sides for dipping.
